Sandwiches


There are a variety of ways to make a sandwich, we have often used bread as the main staple in a sandwich, but it doesn’t have to be.

Try using a lettuce (Romaine) wrap, collard greens, edible seaweed, or thinly sliced jicama (Mexican Yam) to wrap or hold the filling. Or just take away the bread and serve the sandwich filling over a salad. Or try it with a healthy whole grain like quinoa or orzo, or a baked or steamed sweet potato.

If you can’t do without your bread then choose the healthy options, you can easily sub in organic whole grain and sprouted grain varieties or artisan organic sourdough loaves from local bakers. Swap out loaf bread for the much thinner pita, wheat tortilla or other wrap.

 You can also make your own bread, which gives you ultimate control over flavor and ingredient quality.


Make it spicy

If you love heat, add 1–2 tablespoons of diced jalapeno and ½ tsp chipotle chili powder (or regular chili powder if you like less spice). Or you can simply add some red pepper flakes.

 Avocado and Chickpea Salad Sandwich


Ingredients


 1 ½ cups chickpeas
 1 large avocado
 ¼ tsp ground black pepper
 ½ tsp ground turmeric
 ½ tsp paprika
 ½ tsp chia seeds
 1 tsp pesto
 1 whole lime (juiced)
 1 tbsp organic apple cider vinegar
 ¼ cup spring onion
 ¼ cup celery (chopped)
 ¼ cup cilantro (chopped)
2 leaves of Romaine lettuce

Directions

Drain your chickpeas.

In a medium bowl, add chickpeas, avocado, chia seeds, pepper, turmeric, paprika, garlic, pesto, lime, and apple cider vinegar.

Smash avocado and chickpeas with a fork or potato masher until most chickpeas are fully.

Mix in green onion, celery, and cilantro.

Taste and season with more pepper as needed. Sprinkle with more paprika.

Scoop a generous amount into each lettuce wrap.

This recipe can be stores in the refrigerator for 5-7 days. Enjoy.
Optional Additions – sprouts, radish, grated carrots or cucumber.
